Macaron Diaries: Green Tea Macarons

November 29, 2013

In search of the perfect macaron recipe... experimenting with different methods and learning from mistakes.

First attempt: Green Tea Macarons with Green Tea Buttercream

Piping into circles - batter appears thick and grainy, shells look large

There are feet! but shells are domed and puffy with a tip.

Puffy mini burgers.. but the taste is there!

Recipe adapted from Orange Bakery: Video
Buttercream recipe from Martha Stewart

Ingredients
80g Confectioner sugar
50g Almond powder/flour
16g Sugar
40g Egg White
Matcha powder

Shells
Taste: chewy texture, tastes like a macaron! Could have more flavor, right now has more egg-white/almond taste than green tea
Appearance: batter is grainy; puffy, domed shells– undermixed batter

Buttercream
Taste: too sweet, too heavy

Verdict: appearance wise could definitely be improved – learned that the domed shells were due to undermixing during the macaronage process. Taste-wise is good; actually tastes like a macaron!
